Ingredients
- 1½ pounds boneless, skinless chicken thighs
- ¾–1 cup bottled Italian dressing (enough to generously coat the chicken)
- 1–2 teaspoons dried thyme
- Salt and freshly ground black pepper, to taste
Preparation
- Place chicken thighs in a bowl or resealable bag. Add Italian dressing, dried thyme, salt, and pepper, making sure the chicken is evenly coated.
- Cover and marinate in the refrigerator for at least 4 hours, preferably overnight, allowing the flavors to fully develop.
- Preheat your grill to medium-high heat. For the traditional Baba Sam experience, grill over charcoal for that signature smoky flavor.
- Grill chicken thighs for approximately 5–7 minutes per side, or until beautifully charred and the internal temperature reaches 165°F.
- Let rest for a few minutes before serving.
Serve with garlic toum, pita bread and favorite sides noted on my website (Baba Sam’s Syrian Potato Salad) and gather your favorite people around the table just like Baba Sam always did.
