INGREDIENTS
4 slices rustic country bread (day old), cut into bite sized pieces
1/4 cup olive oil
2 crushed garlic cloves
Salt and pepper to taste
8 ounces chicken nitrate free chorizo, slice or cube into bite sized pieces (feel free to replace with a traditional chorizo)
1/2 cup chopped fresh parsley for garnish
Pinch red pepper flake (optional)
PREP
1. Heat the olive oil in a large skillet with the garlic
2. Add the bread cubes and stir to coat in the oil
3. Season with salt and pepper
4. Fry until the bread is nicely toasted on each side
5. Add the chorizo and cook until heated it through
6. Transfer the bread and chorizo to a serving platter. Garnish with the parsley and crushed red pepper
