Ingredients
- 1 lb ground turkey or ground beef
- ½ onion or 1 shallot, finely chopped
- 1 garlic clove, mashed
- ½ tablespoon chili powder
- ½ tablespoon dried oregano
- 1 teaspoon salt
- ¼ teaspoon black pepper
- 3 tablespoons tomato paste
- 1 (15-oz) can tomato sauce
- 1 cup uncooked rice or 3 cups cooked rice
- 2 cups water (if using uncooked rice)
To Serve
- Crushed Doritos or Fritos
- Shredded cheese
- Chopped green onions
- Shredded lettuce
- Chopped black and green olives
Instructions
- In a large skillet or pot over medium heat, brown the ground turkey or beef, breaking it up as it cooks.
- Add the onion (or shallot) and garlic and cook until softened and fragrant.
- Stir in the chili powder, oregano, salt, and black pepper.
- Add the tomato paste and tomato sauce, mixing well to combine.
- If using uncooked rice, add the rice and water. Bring to a simmer, cover, and cook for about 30 minutes, or until the rice is tender.
- If using cooked rice, stir it in and simmer for 10–15 minutes, until heated through and flavors are well blended.
- Remove from heat and let rest for a few minutes before serving.
Serving Suggestion
- Spoon the taco casserole over crushed Doritos or Fritos.
- Top with shredded cheese and finish with green onions, lettuce, and olives.
