Fasolia (Classic Syrian or Lebanese Green Beans with Tomato)

INGREDIENTS

  • 1 lb fresh or frozen green beans
  • 1-2 cubed tomatoes or 1 can of drained diced tomatoes
  • 1 finely chopped onion
  • 2 cloves garlic, mashed
  • 2-4 TBSP EVOO or ghee
  • 1½ teaspoons salt
  • ½ teaspoon pepper
  • 1-2 teaspoons 7 spice
  • 1 teaspoon ground coriander
  • 1/4 cup finely chopped parsley
  • 1/2 lemon juiced

PREP

Lightly brown garlic and onions in the evoo or ghee in a Dutch oven pot.

Mix in the beans and tomatoes and fry for a few minutes.

Add the salt, pepper and remaining spices. Bring to the boil, cover and simmer slowly until the beans are tender.

Add parsley and lemon juice.

SERVE

As a side dish or with my rice pilaf recipe.
