Levantine Spinach + Rice

INGREDIENTS 

3 tablespoons extra-virgin olive oil

3 mashed cloves garlic

1 6 ounce package of fresh spinach or a 10-ounce package frozen chopped spinach, thawed and squeezed dry

3 cups cooked brown or white rice

1 teaspoon salt

1/4 teaspoon freshly ground pepper

1/2 fresh lemon, squeezed 

Optional garnish with freshly shaved parmesan, feta or goat cheese.


PREP

  • In large skillet or dutch oven pan heart olive oil over medium heat. Add garlic and sauté for a minute followed by spinach; cook, stirring for 3 additional minutes. 
  • Stir in rice, salt, pepper and lemon juice.
  • Add additional salt, pepper and lemon based on your preference.
  • Garnish with freshly shaved parmesan, feta or goat cheese
