Ingredients
• 3 heaping teaspoons finely ground Arabic coffee
• 1 tablespoon sugar (optional, adjust to taste)
• Cold water (enough to fill a special coffee pot, leaving room for boiling)
Preparation
1. Pour cold water into the special coffee pot, leaving about ½ inch of space at the top.
2. Add the coffee and sugar (if using).
3. Stir gently until the coffee and sugar are fully dissolved.
4. Place the pot on the stovetop over medium heat.
5. As the coffee begins to rise and foam, remove it from the heat just before it boils over.
6. Return the pot to the heat and repeat this rise-and-remove process three times total.
7. Pour the coffee slowly into small serving cups, making sure each cup gets a bit of foam.
Serving Tip
Serve immediately, traditionally with a small sweet, such as Turkish delight, on the saucer.
