Ingredients
- 1 - 2 lbs ground beef, turkey, chicken, cubed beef chuck, or chorizo
- 1 large onion or shallot chopped
- 2 cloves garlic, chopped
- 1 tsp each of chili powder, cumin and smoked paprika
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 diced tomato (fresh or canned)
- 1 can tomato purée
- 3 tablespoons tomato paste
- 1 teaspoon Worcestershire sauce
- 1 cup beef broth
- 2 cans kidney beans
- Optional ⅛ teaspoonred pepper flakes
Directions
- In a large pot, brown the chopped onion or shallot, garlic and meat. Drain excess fat.
- Add the diced tomatoes, tomato purée, tomato paste, and beef broth.
- Stir in the remaining ingredients.
- Bring to a boil, then reduce heat to low and simmer for 2 hours, stirring occasionally.
- Taste and adjust salt and pepper
Serve with: shredded cheese, chopped cilantro, my homemade garlic bread recipe or corn chips.
