One Pot Kousa Meshi

INGREDIENTS

2-4 Kousa (found at a specialty market) or Zucchini

1 LB ground beef

1 TBSP EVOO

2 cloves of garlic crushed

1 tsp each of tumeric, ground coriander, salt and pepper

1/2 tsp each of ground allspice, and cinnamon

1-2 diced fresh tomatoes or 1 - 12 ounce can of whole San Marzano tomatoes

Optional: top with dried mint and 1/4 cup pine nuts sautéed in butter

Adjust salt and pepper to your taste preference’s

PREP
(In Dutch Oven Pot)
Slice kousa or zucchini into cubes

Sauté garlic cloves in 1 tablespoon of EVOO. Add all spices and sauté while stirring for 1 min.

Add ground beef and cook until browned and spices are mixed throughout the meat. Add the squash or zucchini.

Add tomatoes and bring to boil and reduce to a simmer, cover pot and let cook for at least an hour until zucchini is tender.

TOPPINGS
Sauté pine nuts in 1 TBSP butter until lightly browned.

SERVE
With brown or white basmati rice and garnish with roasted pine nuts and chopped fresh or dried mint.
