Pistachio Basil Pesto


INGREDIENTS

½ cup chopped basil

1 garlic clove

⅓ cup shelled pistachios (unsalted)

2 tablespoons grated parmesan cheese

¼ teaspoon salt

Dash of ground black pepper

½ cup olive oil

Juice of 1/2 lemon

PREP

In the small bowl of a food processor or blender (mini bullet) add the chopped basil, garlic, pistachios, olive oil. cheese, salt and pepper.

Blend until well combined and add lemon juice. Adjust the salt and pepper to your taste.
