Ingredients
- 1 large ripe tomato, sliced very thin
- 2 tablespoons fresh parsley, finely chopped
- 1 teaspoon za’atar
- ¼ teaspoon kosher salt, or to taste
- Freshly ground black pepper, to taste
- Optional: ¼ teaspoon Aleppo pepper
- 1 tablespoon pomegranate molasses
- 1 tablespoon fresh lemon juice
Instructions
- Arrange the thinly sliced tomato on a serving plate.
- Scatter the parsley evenly over the tomatoes.
- Sprinkle with za’atar, salt, black pepper, and Aleppo pepper, if using.
- Drizzle with the pomegranate molasses and lemon juice.
- Let sit for 5–10 minutes before serving so the tomatoes can absorb the flavors.
- Serve immediately with warm pita or as part of a mezze spread.
Nunu’s Tip: Keep the tomato slices thin and dress the salad just before serving. The combination of tangy lemon + sweet-tart pomegranate molasses + earthy za’atar is what makes this simple salad so good.
