Ingredients
- 4 medium potatoes
- ¼ cup extra virgin olive oil
- Juice of 1–2 lemons (to taste)
- Salt, to taste
- Black pepper, to taste
- ¼ cup chopped fresh parsley
- 2–3 green onions, thinly sliced
Instructions
- Peal potatoes and cut into small bite-sized pieces.
- Boil the potatoes until fork-tender.
- Drain and let cool just enough to handle,
- While the potatoes are still warm, place them in a large bowl.
- Drizzle with the olive oil and the juice of 1–2 lemons.
- Season generously with salt and black pepper.
- Add the chopped parsley and green onions, then gently toss until everything is evenly coated.
- Taste and adjust with additional lemon juice, salt, or pepper as needed.
- Serve warm, at room temperature, or chilled.
