Baba Sam’s Syrian Potato Salad (Salatet Batata)

Ingredients

  • 4 medium potatoes
  • ¼ cup extra virgin olive oil
  • Juice of 1–2 lemons (to taste)
  • Salt, to taste
  • Black pepper, to taste
  • ¼ cup chopped fresh parsley
  • 2–3 green onions, thinly sliced

Instructions

  1. Peal potatoes and cut into small bite-sized pieces.
  2. Boil the potatoes until fork-tender.
  3. Drain and let cool just enough to handle,
  4. While the potatoes are still warm, place them in a large bowl.
  5. Drizzle with the olive oil and the juice of 1–2 lemons.
  6. Season generously with salt and black pepper.
  7. Add the chopped parsley and green onions, then gently toss until everything is evenly coated.
  8. Taste and adjust with additional lemon juice, salt, or pepper as needed.
  9. Serve warm, at room temperature, or chilled.
